Funks Grove is well known for its rich sugar maple forest, but that forest is also home to a robust colony of native ramps. Ramps are a native species of onion, Allium tricoccum, that emerge in the spring as the maple sirup season begins to wind down. We harvest just the leaf tops to leave their roots completely intact, and turn it into a fine, bright-green powder.
